Pineapple Salsa

Pineapple might not belong on pizza, but it’s unique tart and sweet flavour make it perfect for a salsa. This pineapple salsa recipe is perfect for spicy chicken wings or jerk chicken. It’s also great for use on tacos, quesadillas, or fajitas. Or serve with tortilla chips and enjoy a healthy snack that feels like you’re cheating.

Tomatoes may seem a little bit normal compared to the use of pineapple, but both are fruits, so what difference does it make? I know it may sound too sweet for some people, especially those who think fruit shouldn’t ever be savoury, but there’s a long tradition. I promise you; you won’t be disappointed by this easy pineapple salsa.

Ingredients for Pineapple Salsa

Pineapple – Remove the rough outer skin, exposing the yellow flesh. Cut the pineapple in half and remove the tough core. Chop the pineapple into equal chunks. Size really isn’t important, but pineapple as the main ingredient should set the tone for the rest of the veg. However, I find the smaller, the better. Any bigger than 1cm in thickness would make the pineapple salsa, more of a pineapple salad.

Red Pepper – Most salsas incorporate a chilli pepper, but I like using a red pepper as I usually serve this tropical salsa alongside spicy food, so it helps to keep the salsa, tasting fresh without any spicier ingredients. If you’d like to make it spicy, feel free to add a few chopped jalapenos to suit your tastes.

Red Onion – Peel and dice the onion into the same size as the other ingredients. White onion can also be used here like a traditional Pico de Galo. However, red onions have a sweeter, less harsh bite which works well with pineapple.

Lime and Olive oil – The juice, when combined with a fruity olive oil, and salt helps to break down the vegetables, resulting in a more flavourful salsa.

Time – The most important ingredient for this pineapple salsa, might be time. Set the salsa aside for at least 20 minutes so the ingredients have time to infuse and combine. Overnight is best.

Ingredients
  

  • ½ Pineapple Finely Diced
  • 1 Red Pepper Diced
  • ½ Red Onion Diced
  • 2 Limes Juice and Zest
  • 2 Tbsp Olive Oil
  • Salt to Taste

Instructions
 

  • In a bowl, combine all the ingredients together and mix well. Season to taste, and set aside for at least 20 minutes, but preferably overnight.
