Mint and Cucumber Salad

This refreshingly easy salad makes the perfect accompaniment for summer picnics and grilled meats.

There are three stages to this mint and cucumber salad. Stage 1 – Salt the cucumber. Stage 2 – Make the dressing. Stage 3 – Dress the salad.

Salting the Cucumbers

Salting the cucumbers is necessary even if it feels redundant. It not only seasons the cucumbers but draws out some of their water, giving the cucumbers a firmer, meatier texture.

The Dressing

The dressing is simple enough, similar to a basic vinaigrette except it doesn’t contain a binding ingredient such as mustard. The dressing won’t stay together and will need to be shaken before serving.

Dressing the Mint and Cucumber Salad

Once the salad ingredients have been tossed together in a bowl and you’re ready to serve, toss liberally with the dressing. As tempting as it is to dress the salad in advance, it would be best to do it at the last minute. Dressing the salad too early will cause the salad to wilt and replace the firm, crunchy textures with a softer mush-like feel.

Ingredients

2 Cucumbers, Deseeded, and Sliced Thinly

2 Tsp Salt

½ Red Onion, Finely Chopped

Juice of ½ Lemon

60ml Extra Virgin Olive Oil

¼ Tsp Black Pepper

¼ Tsp Oregano

30g Mint Leaves, Sliced

Method

  1. Toss the deseeded cucumbers in salt and set aside for 20 minutes.
  2. After 20 minutes, rinse the salt off the cucumbers and pat dry.
  3. Toss the cucumber, chopped mint leaves and red onion together.
  4. In a separate bowl or bottle with a screw-top lid, mix the vinegar, oil, black pepper, and oregano.
  5. Dress the cucumber and red onion, season to taste and serve.
