Little Gem makes a great addition to salads as it’s mild tasting and allows other ingredients to shine.

Little Gem lettuce is one of my favourite types of lettuce. Sometimes referred to as baby gem, Little Gem is a small variety of romaine lettuce, the signature leaf used in a Caesar salad. The sweet leaves are a cross between romaine and butterhead lettuce.

Little Gem makes a great addition to salads as it’s mild tasting and allows other ingredients to shine. The hearts of little gems provide a buttery sweet flavour and aren’t prone to developing butter after notes like other lettuces. The heart of the lettuce is what is usually sold in shops with the outer leaves removed for easier preparation.
Ingredients
2 Hearts of Little Gem, Core Removed, and Leaves Separated, but kept whole.
½ Cucumber, Seeds removed, and sliced thinly
4-5 Radishes sliced thinly.
60g Pickled Shallots
1 Tbsp Parmesan or Grana Padano, Freshly Grated
2 Tbsp Ranch Dressing
Salt / Pepper to taste.
Method
- In a bowl, mix the lettuce, cucumber, ½ of the radish, and ranch dressing together. Season to taste
- Arrange the leaves in layers in a bowl with the shallots.
- Finish the layered salad with the remaining radishes and shaved cheese.

Little Gem Lettuce and Pickled Shallot Salad
Ingredients
